Breadfruit with Tomatoes

Ingredients
  

  • 1 whole Breadfruit.
  • 1 - 2 large sweet red tomato, chopped (or ½ - 1 cup of canned tomatoes chopped)
  • ¼ cup chopped onion
  • 3 garlic cloves, chopped (1 tbsp minced)
  • 1/3 cup sweet pepper, chopped (Bell, pimento or mini)
  • ¼ finely celery finely chopped
  • Salt to taste
  • Pepper to taste
  • 1 tsp vegetable oil

Instructions
 

  • Peel the Breadfruit. cut length-ways in half (from stem to end). Then slice both half pieces length-ways into half-pieces again, to get 6 wedge-shaped pieces. Cut out and discard the center of each wedge. Then cut each wedge into smaller pieces.
  • Add all ingredients in a pot and cover with water.
  • Bring to boil, reduce heat, cover and simmer for 30 minutes or until tender. There should be a little gravy in the pot, so be careful not to let all the water dry out.

Notes

Pairing: Eat with stew white beans or other beans, or dhal, and/or cooked vegetables or a salad.
