Cornmeal Porridge
aka, Crema de Maiz or Harina de Maiz
Ingredients
- 1 ½ cups plant-based milk
- ½ cup fine cornmeal (do not use cornmeal flour)
- 2 tbsp maple syrup or date syrup
- 1 cinnamon stick, or tsp cinnamon powder
- 1 tsp vanilla extract
- ½ tsp salt, or to taste
Instructions
- Add all ingredients except the into the pot and mix on medium to medium high heat, stirring with a whisk constantly, until it is the consistency of cream of wheat or oatmeal, but not hard like polenta.
- Serve with toppings of your choice (e.g., fruit, powdered cinnamon, maple syrup, date syrup, raisins, chopped dates, nuts, chocolate syrup).
- Serve hot or warm.
