Macaroni and “Cheese”
Ingredients
- 2 cups dry macaroni or any kind of pasta (makes about 3 cups)
- ¼ tsp salt
- ½ cup raw unsalted cashews
- ½ cup cooked pumpkin or ¼ cup mashed sweet potato
- ½ cup water
- 2 tsp garlic powder, or 1 garlic clove, chopped
- 2 tsp mustard
- 2 tsp like juice
- 2 tsp ketchup
- 1 tsp salt
- ¼ tsp black pepper
Instructions
- Cook the macaroni with ¼ tsp of salt, per the instructions on the package. Remove from heat, drain and set aside.
- Add all ingredients for the sauce to a blender and blend until smooth.
- Place pot with the macaroni on medium-low heat and pour sauce into pot and mix thoroughly for 1 minute.
- Remove from heat and serve.
