Macaroni and “Cheese”

Ingredients
  

  • 2 cups dry macaroni or any kind of pasta (makes about 3 cups)
  • ¼ tsp salt
  • ½ cup raw unsalted cashews
  • ½ cup cooked pumpkin or ¼ cup mashed sweet potato
  • ½ cup water
  • 2 tsp garlic powder, or 1 garlic clove, chopped
  • 2 tsp mustard
  • 2 tsp like juice
  • 2 tsp ketchup
  • 1 tsp salt
  • ¼ tsp black pepper

Instructions
 

  • Cook the macaroni with ¼ tsp of salt, per the instructions on the package. Remove from heat, drain and set aside.
  • Add all ingredients for the sauce to a blender and blend until smooth.
  • Place pot with the macaroni on medium-low heat and pour sauce into pot and mix thoroughly for 1 minute.
  • Remove from heat and serve.
