Guacamole

(Avocado Dip)

Ingredients

  • 1 large Caribbean/Florida avocado or 4 Hass avocados or equivalent
  • ¼ cup onion, chopped
  • 1 tbsp lime juice
  • ¼ tsp salt or to taste
  • 1 tsp medium to hot pepper, finely chopped, or to taste (optional)
  • 1 small tomato, sliced and diced into ½-inch cubes (optional)

Instructions

  • Cut the avocado in half. Remove the seed and scoop out the jelly.
  • In a large bowl, use a fork to crush the avocado jelly. You can keep some larger pieces if you prefer.
  • Add the onion, lime juice, salt and pepper, and mix for 1 minute so that the seasoning can dissolve and spread evenly throughout the avocado to make a nicely blended guacamole.
  • Optional: add tomatoes and mix.
  • Serve cold. Store in the fridge in a tightly sealed container to about 3 days.

Notes

Pairing:
Add guacamole to tacos, wraps, toast, grain bowls, stews and salads.
Use as dip for carrots, crackers, tortilla chips, potato chips and pita chips.
