Cashew Herb Dressing
Ingredients
- 1 cup water
- ½ cup raw unsalted cashews
- ¼ cup sweet red or orange pepper, chopped (pimento, Bell or mini)
- 2 tbsp mustard
- 2 tsp lime juice
- 2 tsp apple cider vinegar
- 2 tsp Maple syrup* or 1 date, pitted and chopped. (*You can also experiment with adding a little sweet fruit as a sugar substitute, such as mango, pineapple or orange.)
- 1 tsp ketchup
- 1 scallion, chopped
- 2 tsp salt
- Black pepper to taste
Instructions
- Blend all ingredients in a blender until smooth. Taste and adjust ingredients, if necessary, to your liking.
Notes
Pairing: Add salad dressing to any salad, wraps, tacos and rice bowls.
