Chickpea-Corn Fritters

  This dish makes for a great breakfast. If you are cooking the chickpeas from scratch, remember to cook it at least the day before to save time if you are preparing the dish in the morning. Save the chickpea liquid (called aquafaba) as it helps to bind the fritters.

Dhal

  This recipe is a variation of Trinidad dhal. For simplicity, the toasted cumin (geera) seeds and toasted garlic are omitted. But feel free to add this step at the end if you are familiar with the technique. Also, tomato is added for additional flavour.
