Caribbean Bowl
The Caribbean bowl, aka grain bowl or Buddha bowl, is a vegetarian or vegan dish consisting of several small portions of different kinds of food served in a large bowl. It can be served as a cold or hot dish. Feel free to add more portions than the suggested quantity in this recipe.
Ingredients
- ¼ cup of any of the following grain. Cooked rice, corn, noodle or macaroni. You can also use other grains, such as cooked quinoa, couscous or baked polenta sticks.
- ¼ of any of the following legume. Cooked beans, peas or lentils. Examples are any kind of cooked beans, roasted chickpeas, brown lentils, pigeon peas, green peas, or edamame. Or you can add seasoned Tempeh, marinated-cooked Tofu.
- ¼ of any of the following starchy vegetable. Baked sweet potato or pumpkin, diced or sliced, fried or baked plantain, or boiled or baked green fig (green banana).
- 1-2 non-starchy vegetable. Good choices include, mushrooms, steamed or oven-roasted broccoli, steamed or oven-roasted cauliflower, oven-roasted or raw sweet peppers, oven-roasted Brussel sprouts halves, raw or baked carrots, cucumbers, tomatoes, watercress, avocado, christophene (chayote), green and yellow zucchini, and boiled or oven-roasted asparagus.
- 1 tbsp sauce or salad dressing, salsa or chutney of your choice*.
- 1 tbsp seeds. Examples are raw or roasted unsalted seeds such as roasted pumpkin seeds, raw sunflower seeds, raw hemp seeds. Raw or roasted unsalted nuts, such as peanuts, walnuts, almonds, cashew nuts, Brazil nuts, etc.
- Other toppings are olives, cilantro leaves, parsley leaves, raisins, dates, pineapples, apples, pears, pommecythere and dried fruit.
Instructions
- In a large soup bowl, add the grain and beans. Then add the other ingredients. Top with sauce or salad dressing of your choice.
