In this version, instead of boiling or roasting the tomatoes, they will be cooked directly with the seasoning for a chunkier texture. It is also lower in fat than the traditional version.

Pico de Gallo is more like a chunky salsa. It's the same ingredients, but salsa, instead, is blended.
The components of a vinaigrette dressing are sour, sweet, salt and oil. For an oil-free version, replace oil with water. Experiment with different ingredients and combinations.
