Chocolate Banana Bites
Ingredients
- 2 firm ripe bananas
- 2 cups of non-dairy chocolate chips, or 2 non-dairy chocolate bars
- 1 tbsp coconut oil
- Toothpicks
- 1/4 cup peanuts nuts, crushed (optional)
Instructions
- Peel and remove the banana skins, and slice bananas into 1-inch pieces.
- Stick 1 toothpick into each piece, place in the freezer for 30 minutes.
- Add oil and chocolate chips to a pot and heat on low heat until completely melted, then stir (you can also microwave to melt the mixture).
- Remove the bananas from the freezer and dip each in the melted chocolate/coconut mixture and back on the trays.
- Optional: immediately sprinkle a few crushed nuts cover the chocolate.
- Serve immediately, or place trays in the freezer to allow the chocolate to firm up, then serve cold.
