Chocolate Parfait
Pronounced “par fay”
Ingredients
- 1 cup raw unsalted cashews
- ½ cup water
- 4 pitted dates, or other sweetener to taste
- ⅛ tsp salt
- ¼ tsp nutmeg powder
- 1-2 ripe bananas
- 2 tbsp non-dairy chocolate syrup, or to taste
- ¼ tsp cinnamon powder
- 1 tbsp peanut crumbles, or shredded coconut
Instructions
- Soak cashews in 1 cup of water for 30 minutes (or overnight).
- Wash the skin off of the dates, then add dates to a cup with 2 tbsp of water and soak for 15 – 30 minutes.
- Drain cashews and add to a blender along with the dates (including its soaked water), salt and nutmeg. Taste and adjust ingredients if needed.
- Peel the banana, break into pieces and add to a small bowl or a cup.
- Add the chocolate syrup to the banana. Mash the banana and mix with the chocolate and cinnamon with a fork or small blender. Taste a adjust ingredients if needed.
- To a glass, add a few tablespoons of the blended cashews. Then add a layer of the banana-chocolate, then repeat a 2nd time.
- Store in the refrigerator. Serve cold or at room temperature.
- Top with peanut crumbles or shredded coconut before serving.
