Dasheen with tomatoes
Note about dasheen (or callaloo bush): This leafy green vegetable is packed with nutrients, but must be handled carefully. Here are a few things to note if you're not familiar with cooking dasheen.1) Remove all stems from the dasheen leaves before chopping the leaves. If you want to include all or some of the stems then chop them separately into ½ inch pieces. 2) Thoroughly wash leaves and stems first. And thoroughly wash your hands and arms with soap and water before and after handling raw dasheen, or wear gloves while handling. 3) Dasheen should not be eaten raw; it must be cooked for at least 30 minutes.
Ingredients
- 8-10 cups of dasheen leaves, chopped
- 1 medium tomato
- 1/4 cup chopped onions (optional)
- 1 tsp salt, or to taste
- ½to 1 cup water
Instructions
- Add all ingredients in a pot, bring to a slight boil, stir, cover, reduce heat and simmer for 30 - 40 minutes. Check water level after 20 minutes and add more water if needed.
- When done most of the water should have evaporated.
