Mango Pudding
Ingredients
- 2 ripe mangoes
- 1 cup plant-based milk
- 1 tbsp maple syrup, brown sugar, or another sweetener
- ⅛ tsp cinnamon powder
- 1 tbsp coconut oil (optional)
- 1 tsp ground flaxseeds or chia seeds (optional)
Instructions
- Peel mangos, remove the seed and cut the flesh into 1or 2-inch pieces.
- Add all ingredients into a blender and blend until smooth (save a few pieces to add after blending if you wish).
- Adjust ingredients, if needed, to taste.
- Add extra mango pieces after blending (optional).
- Place in the refrigerator to cool, or enjoy as-is.
