Chunky Tomato Choka
In this version, instead of boiling or roasting the tomatoes, they will be cooked directly with the seasoning for a chunkier texture. It is also lower in fat than the traditional version.
Ingredients
- 2 cups ripe tomatoes*, sliced and diced into ½ inch pieces (*If you don’t have ripe tomatoes that taste slightly sweet, you can add a pinch of brown sugar (⅛ – ¼ tsp) to the tomatoes while cooking)
- 1 garlic clove, finely chopped
- ¼ cup onions, chopped
- 2 tsp olive oil, or other vegetable oil
- 1 tsp hot pepper, finely chopped, or chili flakes
- ¼ tsp salt or to taste
Instructions
- Heat a skillet to medium heat.
- Add the oil, then add the onions and salt, and gently stir for 2 minutes.
- Add the garlic and hot pepper and stir for 30 seconds.
- Add the tomatoes, stir thoroughly, cover and let simmer for 10 minutes.

Pairing: Add to tacos, wraps, over rice dishes, bean dishes, polenta, rice bowl and in salads.
