Tomato Cucumber Salad

Ingredients
  

  • 2 large cucumbers
  • 2 medium tomatoes
  • 1 tbsp olive oil
  • 1 – 2 tbsp lemon juice or 1 - 2 tsp lime juice or to taste
  • 8-10 cilantro leaves, or to taste (Use parsley leaves if you don't have cilantro )
  • ¼ tsp of salt, or to taste
  • ¼ tsp of black pepper, or to taste
  • Optional: dived avocado, corn kernels, chopped scallions, cooked chickpeas or other beans.

Instructions
 

  • Peel cucumbers (you can leave the skin on if you desire).
  • Cut cucumbers in half (cross section) then slice in half down the middle so that it can lay flat.
  • Cut cucumbers length ways into three sections then chop to about 1 inch in size.
  • Cut tomatoes into the similar size pieces as you did with the cucumbers.
  • Add all ingredients in a large bowl and gently mix until evenly coated.
  • Serve cold or at room temperature.
