Tomato Cucumber Salad
Ingredients
- 2 large cucumbers
- 2 medium tomatoes
- 1 tbsp olive oil
- 1 – 2 tbsp lemon juice or 1 - 2 tsp lime juice or to taste
- 8-10 cilantro leaves, or to taste (Use parsley leaves if you don't have cilantro )
- ¼ tsp of salt, or to taste
- ¼ tsp of black pepper, or to taste
- Optional: dived avocado, corn kernels, chopped scallions, cooked chickpeas or other beans.
Instructions
- Peel cucumbers (you can leave the skin on if you desire).
- Cut cucumbers in half (cross section) then slice in half down the middle so that it can lay flat.
- Cut cucumbers length ways into three sections then chop to about 1 inch in size.
- Cut tomatoes into the similar size pieces as you did with the cucumbers.
- Add all ingredients in a large bowl and gently mix until evenly coated.
- Serve cold or at room temperature.
