Mango Pudding

Ingredients
  

  • 2 ripe mangoes
  • 1 cup plant-based milk
  • 1 tbsp maple syrup, brown sugar, or another sweetener
  • tsp cinnamon powder
  • 1 tbsp coconut oil (optional)
  • 1 tsp ground flaxseeds or chia seeds (optional)

Instructions
 

  • Peel mangos, remove the seed and cut the flesh into 1or 2-inch pieces.
  • Add all ingredients into a blender and blend until smooth (save a few pieces to add after blending if you wish).
  • Adjust ingredients, if needed, to taste.
  • Add extra mango pieces after blending (optional).
  • Place in the refrigerator to cool, or enjoy as-is.
