Chocolate Parfait

Pronounced “par fay”

Ingredients
  

  • 1 cup raw unsalted cashews
  • ½ cup water
  • 4 pitted dates, or other sweetener to taste
  • tsp salt
  • ¼ tsp nutmeg powder
  • 1-2 ripe bananas
  • 2 tbsp non-dairy chocolate syrup, or to taste
  • ¼ tsp cinnamon powder
  • 1 tbsp peanut crumbles, or shredded coconut

Instructions
 

  • Soak cashews in 1 cup of water for 30 minutes (or overnight).
  • Wash the skin off of the dates, then add dates to a cup with 2 tbsp of water and soak for 15 – 30 minutes.
  • Drain cashews and add to a blender along with the dates (including its soaked water), salt and nutmeg. Taste and adjust ingredients if needed.
  • Peel the banana, break into pieces and add to a small bowl or a cup.
  • Add the chocolate syrup to the banana. Mash the banana and mix with the chocolate and cinnamon with a fork or small blender. Taste a adjust ingredients if needed.
  • To a glass, add a few tablespoons of the blended cashews. Then add a layer of the banana-chocolate, then repeat a 2nd time.
  • Store in the refrigerator. Serve cold or at room temperature.
  • Top with peanut crumbles or shredded coconut before serving.
