1 - 2large sweet red tomato chopped (or ½ - 1 cup of canned tomatoes chopped)
¼cuponion, chopped
3garlic cloves(1 tbsp minced)
⅓cupsweet pepper chopped (Bell, pimento or mini)
¼celeryfinely chopped
Salt to taste
Pepper to taste
Instructions
Peel and cut the cassava into small pieces.
Add all ingredients in a pot and cover with water.
Bring to boil, reduce heat, cover and simmer for 30 minutes or until tender. There should be a little gravy in the pot, so be careful not to let all the water dry out.

Pairing: Eat with stew white beans or other beans, or dhal, and/or cooked vegetables or a salad.
