Cilantro Pepita Dressing

roasted unsalted pumpkin seeds, or raw pumpkin seeds roasted in the oven at 350 degrees for 10 minutes
¼
cup
raw unsalted cashews

cup
water

tbsp
lime juice

tbsp
apple cider vinegar

tsp
Maple syrup*, date syrup or brown sugar (*You can also add some sweet fruit as a sugar substitute, such as mango, pineapple or orange.)

cilantro or parsley leaves, chopped
Chopped hot pepper or chili powder to taste

Instructions
Blend all ingredients, except the herbs, in a blender until smooth.
Then add the herbs (cilantro or parsley) and blend until desired consistency.
Taste and adjust ingredients, if necessary, to your liking.
Store in a sealed jar in the refrigerator. Will last for about 2 weeks.

Add salad dressing to any salad or wraps.
