Cucumber Chutney

Ingredients

large cucumber
3
heaping tbsp
cilantro leaves or culantro (chadon beni) leaves, chopped
½
tsp
salt
1
large garlic clove, chopped
1
tbsp
lemon or lime juice
Hot pepper to taste, chopped. You can also use sweet mini or pimento peppers if you don’t like hot peppers.
Instructions
Cut cucumber in half and remove the seeds (do not remove the skin).
Grate the cucumber halves on the large grater side, and drain the water through a mesh strainer.
In a small food processor, add the cilantro leaves, garlic, lime juice, pepper and salt and blend together.
Transfer to the bowl with the shredded cucumber and mix thoroughly.
Taste and make any appropriate adjustments to you taste.
Drain excess water.

Add to tacos, wraps, over rice and bean dishes, over rice bowl and in salads.
