Add the chickpeas into a food processor (or a bowl if using a potato masher).
Add the remaining ingredients and pulse in the processor until desired smoothness.
If using a potato masher, you can use less water and mash until desired texture then mix with a spoon.
After desired texture, you can add other ingredients to taste, such as chopped olives, small cooked diced potato, chopped sweet pepper, chopped scallions or parsley leaves.
