1-4taro roots, peeled, washed and diced in 1 – 2 inches (about 2 cups)
Salt and black pepper to taste
2tbspplant-based butter/margarine(optional)
1tbspwater
Instructions
Boil the diced taro in water with the lid off or slightly covered for so the water will not boil over (about 5 minutes), until you can stick a fork through the taro.
Remove from heat, drain the water and place in a large bowl.
Use a potato masher or fork to mash the taro.
Add salt, black pepper, plant-based butter (optional), and mix until smooth.
Add a little water if too dry.

Pairing: Serve with a legume of your choice and vegetables.
