Heat a pot to medium heat.
Add vegetable oil, then add the onions, scallions (optional) and 1 tsp salt, and gently stir for 2 minutes. Add a tbsp of water to prevent burning if needed.
Add garlic and gently stir for 1 minute.
Add water and bring to a boil and add the cornmeal and stir until there are no clumps.
Add the butter, black pepper and salt and cook for 10 minutes.
Optional: add the vegan cheese and stir until vegan cheese is melted.
