Cilantro Pepita Dressing
Creamy pumpkin seed dressing
Ingredients

- ½ cup roasted unsalted pumpkin seeds, or raw pumpkin seeds roasted in the oven at 350 degrees for 10 minutes
- ¼ cup raw unsalted cashews
- 1 cup water
- 2 tbsp lime juice
- 2 tbsp apple cider vinegar
- 1 tsp Maple syrup*, date syrup or brown sugar (*You can also add some sweet fruit as a sugar substitute, such as mango, pineapple or orange.)
- 2-3 heaping tbsp cilantro or parsley leaves, chopped
- Chopped hot pepper or chili powder to taste
- 1 tsp salt
Instructions
- Blend all ingredients, except the herbs, in a blender until smooth.
- Then add the herbs (cilantro or parsley) and blend until desired consistency.
- Taste and adjust ingredients, if necessary, to your liking.
- Store in a sealed jar in the refrigerator. Will last for about 2 weeks.
Notes
Pairing: Add salad dressing to any salad or wraps.
