Salsa

Ingredients
  

  • 3 large ripe tomatoes (1 ½ cups diced)
  • ¼ cup onion, chopped
  • 1 tbsp lime juice
  • ½ tsp salt or to taste
  • 1 tbsp medium hot pepper, finely chopped (jalapeño or habanero pepper. For less heat remove all or some seeds)
  • Pinch of black pepper, or to taste
  • 1 tbsp cilantro leaves, chopped (optional)

Instructions
 

  • Dice the tomatoes.
  • Dice the onions into a similar size as the tomato or smaller.
  • Add all ingredients, except the cilantro leaves, into a food processor and pulse for few times to desired texture.
  • Add cilantro leaves and mix the leaves into the salsa.
  • Serve immediately, or let it sit in the refrigerator for 30 minutes to absorb all the flavors for a better taste.

Notes

Pairing:  Add to tacos, wraps, over rice and bean dishes, over rice bowl and in salads.
