Cilantro Pepita Dressing

Creamy pumpkin seed dressing

Ingredients
  

  • Ingredients
  • ½ cup roasted unsalted pumpkin seeds, or raw pumpkin seeds roasted in the oven at 350 degrees for 10 minutes
  • ¼ cup raw unsalted cashews
  • 1 cup water
  • 2 tbsp lime juice
  • 2 tbsp apple cider vinegar
  • 1 tsp Maple syrup*, date syrup or brown sugar (*You can also add some sweet fruit as a sugar substitute, such as mango, pineapple or orange.)
  • 2-3 heaping tbsp cilantro or parsley leaves, chopped
  • Chopped hot pepper or chili powder to taste
  • 1 tsp salt

Instructions
 

  • Blend all ingredients, except the herbs, in a blender until smooth.
  • Then add the herbs (cilantro or parsley) and blend until desired consistency.
  • Taste and adjust ingredients, if necessary, to your liking.
  • Store in a sealed jar in the refrigerator. Will last for about 2 weeks.

Notes

Pairing:   Add salad dressing to any salad or wraps.
