Rice & Sweet Potato Pudding

Ingredients
  

  • 2 cups cooked brown rice
  • 1 cup baked sweet potato mashed, skin removed
  • 2 cups plant-based milk
  • ½ tsp cinnamon powder, or 1 cinnamon stick
  • ½ cup pitted dates washed and chopped
  • 1 banana, or other fruit of your choice
  • ¼ cup raisins
  • ½ tsp salt, or to taste
  • 1 tsp ground flax seed, or chia seeds (optional)

Instructions
 

  • Add to a blender, 2 cups of plant-based milk and ½ cup of pitted dates and blend to create a sweet milk
  • Add to a pot, the milk/date mixture, cooked rice, mashed sweet potato, cinnamon and salt.
  • Heat to medium-low heat and let cook, for 10 minutes, (stirring occasionally) until mixture thickens.
  • Serve hot or warm in a bowl, and top with raisins, chopped fruit and ground flax seed.
