Rice & Sweet Potato Pudding
Ingredients
- 2 cups cooked brown rice
- 1 cup baked sweet potato mashed, skin removed
- 2 cups plant-based milk
- ½ tsp cinnamon powder, or 1 cinnamon stick
- ½ cup pitted dates washed and chopped
- 1 banana, or other fruit of your choice
- ¼ cup raisins
- ½ tsp salt, or to taste
- 1 tsp ground flax seed, or chia seeds (optional)
Instructions
- Add to a blender, 2 cups of plant-based milk and ½ cup of pitted dates and blend to create a sweet milk
- Add to a pot, the milk/date mixture, cooked rice, mashed sweet potato, cinnamon and salt.
- Heat to medium-low heat and let cook, for 10 minutes, (stirring occasionally) until mixture thickens.
- Serve hot or warm in a bowl, and top with raisins, chopped fruit and ground flax seed.
