Cassava with Tomatoes
Ingredients
- 2 large cassavas (each about 12 inches long)
- 1 - 2 large sweet red tomato chopped (or ½ - 1 cup of canned tomatoes chopped)
- ¼ cup onion, chopped
- 3 garlic cloves (1 tbsp minced)
- ⅓ cup sweet pepper chopped (Bell, pimento or mini)
- ¼ celery finely chopped
- Salt to taste
- Pepper to taste
Instructions
- Peel and cut the cassava into small pieces.
- Add all ingredients in a pot and cover with water.
- Bring to boil, reduce heat, cover and simmer for 30 minutes or until tender. There should be a little gravy in the pot, so be careful not to let all the water dry out.
Notes
Pairing: Eat with stew white beans or other beans, or dhal, and/or cooked vegetables or a salad.
