Cassava with Tomatoes

Ingredients
  

  • 2 large cassavas (each about 12 inches long)
  • 1 - 2 large sweet red tomato chopped (or ½ - 1 cup of canned tomatoes chopped)
  • ¼ cup onion, chopped
  • 3 garlic cloves (1 tbsp minced)
  • cup sweet pepper chopped (Bell, pimento or mini)
  • ¼ celery finely chopped
  • Salt to taste
  • Pepper to taste

Instructions
 

  • Peel and cut the cassava into small pieces.
  • Add all ingredients in a pot and cover with water.
  • Bring to boil, reduce heat, cover and simmer for 30 minutes or until tender. There should be a little gravy in the pot, so be careful not to let all the water dry out.

Notes

Pairing: Eat with stew white beans or other beans, or dhal, and/or cooked vegetables or a salad.
