Mango Salsa

Ingredients
  

  • 3 large ripe tomatoes (1 ½ cups diced)
  • ¼ cup onion, chopped
  • ¼ cup mango, diced
  • 1 tbsp lime juice
  • ½ tsp salt or to taste
  • Pinch of black pepper, or to taste
  • 1 tbsp cilantro leaves, chopped (optional)

Instructions
 

  • Slice the tomatoes in ½-inch thick, then cut them across for diced tomatoes.
  • Dice the onions into a similar size as the tomato or smaller.
  • Add all ingredients into a large bowl and mix for 30 seconds.
  • You can serve immediately, or let it sit in the refrigerator for 30 minutes, it will absorb all the flavors for a better taste.

Notes

Pairing:  Add to tacos, wraps, over rice and bean dishes, over rice bowl and in salads.
