Cucumber Chutney
Note: *Adjust any ingredient to suit your taste
Ingredients
- 1 large cucumber
- 3 heaping tbsp cilantro leaves or culantro (chadon beni) leaves, chopped
- ½ tsp salt
- 1 large garlic clove, chopped
- 1 tbsp lemon or lime juice
- Hot pepper to taste, chopped. You can also use sweet mini or pimento peppers if you don’t like hot peppers.
Instructions
- Cut cucumber in half and remove the seeds (do not remove the skin).
- Grate the cucumber halves on the large grater side, and drain the water through a mesh strainer.
- In a small food processor, add the cilantro leaves, garlic, lime juice, pepper and salt and blend together.
- Transfer to the bowl with the shredded cucumber and mix thoroughly.
- Taste and make any appropriate adjustments to you taste.
- Drain excess water.
Notes
Pairing: Add to tacos, wraps, over rice and bean dishes, over rice bowl and in salads.
