French Toast
Ingredients
- 6 slices of bread of your choice (older, firmer bread is better)
- ½ cup chickpea flour
- 1 cup plant-based milk
- ½ tsp salt
- ½ tsp black pepper
- 2 tsp apple cider vinegar
- 2 tbsp maple syrup
- 1 tsp cinnamon powder
- 1 tbsp chia seeds (optional)
- Vegetable butter, margarine, or vegetable oil, for frying
Instructions
- To a large bowl, add all ingredients, EXCEPT the bread and margarine, and whisk until blended.
- Transfer to a square Pyrex dish or another container that is easier to dip the bread in.
- Add bread and let it sit in the mixture for 15-30 seconds, then flip and let it soak as well.
- Heat nonstick pan over medium heat.
- Add oil or vegetable butter or margarine.
- Fry marinated bread until brown on each side.
- Sprinkle brown sugar on hot French toast as soon as it is removed from pan.
- Serve with syrup, jam, fruit, peanut crumbles, and/or peanut butter.
