Mashed Taro
Ingredients
- 1-4 taro roots, peeled, washed and diced in 1 – 2 inches (about 2 cups)
- Salt and black pepper to taste
- 2 tbsp plant-based butter/margarine (optional)
- 1 tbsp water
Instructions
- Boil the diced taro in water with the lid off or slightly covered for so the water will not boil over (about 5 minutes), until you can stick a fork through the taro.
- Remove from heat, drain the water and place in a large bowl.
- Use a potato masher or fork to mash the taro.
- Add salt, black pepper, plant-based butter (optional), and mix until smooth.
- Add a little water if too dry.
Notes
Pairing: Serve with a legume of your choice and vegetables.
