Oatmeal Breakfast Bowl
Ingredients
- 1 cup rolled oats (Follow the directions on the package, if desired, or use this recipe.)
- 2 ¼ cups of water or plant-based milk* (almond, cashew, soya, rice, coconut or oat milk) *You can make your own oat milk in 60 seconds by taking 2 tbsp of the oats from the 1 cup in this recipe, and blend with the water for 30 seconds. Also, blend with two pitted dates, for a healthier sweetener.
- ⅛ tsp salt, or to taste
- ⅛ tsp black pepper
- 1 tsp Maple syrup, date syrup or brown sugar, if you are not using sweetened plant-based milk
- 1 tsp nut butter
- 1 banana and 1-2 cups of chopped pineapple (use any fruits of your choice)
- 1 tbsp sunflower seeds (optional)
- 1 tsp flaxseeds or chia seeds (optional)
Instructions
- Combine the oats, liquid, salt, pepper and sweetener into a small pot and stir.
- Over medium heat, bring to a slight boil and then immediately reduce the heat to low.
- Stir frequently, cover slightly, and simmer until desired creaminess and thickness. About 5 minutes.
- Add more liquid if desired.
- Pour in serving bowls and add the peanut butter and stir.
- Top with 1 - 2 cups of chopped fruit, and 1 tbsp of seeds.
