Polenta (Mayi Moulen)
This is a savory polenta dish.
Ingredients
- 2 cups yellow cornmeal (do not use cornmeal flour)
- ½ cup corn kernels
- 1 tsp vegetable oil
- 2 tbsp plant-based butter or margarine
- 2 tsp salt or to taste
- 1 tsp black pepper, or to taste
- ¼ cup onions, finely chopped
- 1 garlic, finely chopped (1 tsp minced)
- 6 - 8 cups water
- 2 scallions, finely chopped (optional)
- ¼ cup vegan cheddar cheese optional
Instructions
- Heat a pot to medium heat.
- Add vegetable oil, then add the onions, scallions (optional) and 1 tsp salt, and gently stir for 2 minutes. Add a tbsp of water to prevent burning if needed.
- Add garlic and gently stir for 1 minute.
- Add water and bring to a boil and add the cornmeal and stir until there are no clumps.
- Add the butter, black pepper and salt and cook for 10 minutes.
- Optional: add the vegan cheese and stir until vegan cheese is melted.
