Polenta (Mayi Moulen)

This is a savory polenta dish.

Ingredients
  

  • 2 cups yellow cornmeal (do not use cornmeal flour)
  • ½ cup corn kernels
  • 1 tsp vegetable oil
  • 2 tbsp plant-based butter or margarine
  • 2 tsp salt or to taste
  • 1 tsp black pepper, or to taste
  • ¼ cup onions, finely chopped
  • 1 garlic, finely chopped (1 tsp minced)
  • 6 - 8 cups water
  • 2 scallions, finely chopped (optional)
  • ¼ cup vegan cheddar cheese optional

Instructions
 

  • Heat a pot to medium heat.
  • Add vegetable oil, then add the onions, scallions (optional) and 1 tsp salt, and gently stir for 2 minutes. Add a tbsp of water to prevent burning if needed.
  • Add garlic and gently stir for 1 minute.
  • Add water and bring to a boil and add the cornmeal and stir until there are no clumps.
  • Add the butter, black pepper and salt and cook for 10 minutes.
  • Optional: add the vegan cheese and stir until vegan cheese is melted.
